Old-Fashioned Chocolate Pudding Recipe

Igredients

  •     1/2 cup granulated sugar
  •     3 Tbsp cornstarch
  •     1/4 cup unsweetened cocoa
  •     1/2 tsp salt
  •     4 egg yolks
  •     2 1/2 cups whole milk
  •     3 Tbsp unsalted butter
  •     1 tsp pure vanilla extract
  •     1/2 cup semi-sweet chocolate chips



Directions

  1. In a medium-sized saucepan (off the heat), whisk together the sugar, cornstarch, cocoa and salt until no lumps of cornstarch remain. Whisk together the egg yolks and milk in a medium-sized bowl until well combined. Pour half of these wet ingredients over the dry ingredients in the saucepan and stir until completely smooth. Add the remaining half of the milk mixture and stir to combine.
  2. Move the saucepan to the stove and cook over medium heat, stirring constantly with a whisk until the mixture thickens and starts to bubble. Keep scraping the bottom of the saucepan to prevent scorching. Once the first bubble rises to the surface, turn the heat to low and cook exactly 1 minute more, whisking vigorously and constantly.
  3. Remove the saucepan from the heat and whisk in the butter and vanilla. When completely smooth, add the chocolate chips and stir until combined.
  4. Pour the pudding through a sieve or mesh strainer into a medium-sized bowl to remove any lumps. Cover with plastic wrap, pressing the wrap directly onto the surface of the pudding to prevent a skin from forming. Cool in the fridge for at least 4 hours or until completely chilled.

Lemon Chia Seed Pudding Muffins Recipe

Ingredients

  •     2 cups all-purpose flour
  •     2 teaspoons baking powder
  •     1 tsp baking soda
  •     1/4 teaspoon salt
  •     1/2 cup butter, softened
  •     1 teaspoon finely grated lemon zest or 1 tsp lemon extract
  •     2/3 cup granulated sugar
  •     2 large eggs
  •     2 Tbsp chia seeds
  •     1/2 cup milk
  •     4 tsp lemon juice
  •     1 package lemon flavored instant pudding mix
  •     Optional: 1/2 cup powdered sugar
  •     Optional: 1 tbsp. lemon juice



Directions

  1.     Cream together the butter, sugar, eggs, lemon extract or zest until creamy.
  2.     Mix in remaining ingredients until smooth.
  3.     Distribute batter evenly among muffin tin cups (about 15).
  4.     Bake at 375 for 15 minutes.
  5.     Optional: whisk together the powdered sugar and lemon juice to make a glaze (add more lemon juice for a thinner glaze, add more powdered sugar for a thicker glaze). Dip the tops of the muffins in the glaze before serving for an extra sweet lemon kick!
